Best Granola

15 minutes prep time |  Serves 16

Ingredients:
  • 4 c rolled oats
  • 1 c unsweetened shredded coconut
  • 1/2 c wheat germ
  • 1/2 c sesame seeds
  • 1/2 c soy grits, optional
  • 1/2 c sunflower seeds
  • 1/2 c flaxseed
  • 1/2 c chopped walnuts or other nuts
  • 1/2 c maple syrup or honey
  • 1/2 c vegetable oil
  • 1 Tbsp vanilla extract
  • 1/2 c dried cranberries, optional
  • 1/2 c chopped dates, optional
 
Directions:
Preheat oven to 350°.
  1. Combine all dry ingredients in large bowl.
  2. Heat maple syrup or honey, oil, and vanilla until warm, stirring to blend.
  3. Add liquid mixture to dry ingredients. Mix well.
  4. Spread mixture onto large, rimmed cookie sheet.
  5. Bake for 45 minutes, stirring every 15 minutes so mixture toasts evenly.
  6. Cool and stir in dried fruits, if using. 

    Store in airtight container.
