15 minutes prep time | Serves 4
2 tsp paprika
2 tsp dried thyme
1 tsp cayenne pepper
1/2 tsp salt
1/2 tsp freshly ground black pepper
4 catfish fillets, 5–6 oz each
2 Tbsp olive oil
1 fresh lemon, quartered
Mix paprika, thyme, cayenne, salt, and black pepper together in a small bowl. Transfer spice mixture to a flat plate.
Dredge catfish fillets in spice mixture, rubbing spices in with your hands so they adhere to both sides of the fish.
Heat olive oil in a large skillet over medium-high heat. Add catfish to skillet and cook for 3 to 4 minutes per side.
Serve immediately with lemon wedges on the side.
