Gluten-Free Chicken Parmesan
40 minutes prep time | Serves 6 to 8
Ingredients
- Olive oil
- 2 lb boneless, skinless chicken breast halves
- 11/4 c gluten-free bread crumbs
- 1 tsp dried basil
- 1/2 tsp garlic powder
- Salt and freshly ground black pepper to taste
- 1 large egg
- 1/2 c milk
- 1/2 c rice flour
- 1 c shredded mozzarella cheese or 1/2 lb fresh mozzarella, cut into 1/4-inch rounds
- 1/4 c freshly grated Parmesan cheese
- oz gluten-free pasta, cooked
- Your favorite marinara sauce
Directions
- Preheat oven to 400º. Lightly oil the bottom and sides of a large baking dish.
- Between 2 sheets of wax paper on a cutting board, pound meat with a meat mallet or rolling pin until pieces are approximately 1/2-inch thick. Set meat aside.
- In a shallow bowl or pie plate, combine bread crumbs with basil, garlic powder, and salt and pepper to taste. In another bowl, whisk together egg and milk. In a third bowl, combine rice flour and salt and pepper to taste.
- One at a time, dip each piece of chicken into rice flour, then egg mixture, and then bread crumbs. Place breaded chicken pieces in oiled baking dish.
- Bake until chicken is cooked through, approximately 15 minutes. Top chicken with cheeses. Bake for 10 minutes more, until cheeses have melted.
- Serve chicken over your favorite gluten-free pasta. Top with marinara sauce.
