10 minutes prep time | Serves 12
2 pints cherry or grape tomatoes, halved or quartered
1/2 c fresh cilantro, chopped
1 large lemon, juiced
2 Tbsp extra virgin olive oil
Coarsely ground black pepper
1. Place tomatoes and cilantro in a large bowl.
2. Whisk lemon juice in oil until well blended
3. Pour dressing over tomatoes. Season with pepper.
