Potato Leek Soup
Ingredients:
3 large potatoes, diced
3 leeks
1 cup mushrooms, sliced
2 tbsp olive oil
1/2 cup vegetable broth
salt and pepper to taste
Directions:
1) Boil potatoes in water until cooked
2) Sauté the leeks and mushrooms in olive oil until soft
3) Add the vegetable broth and the potatoes and cook for a few more minutes
4) Transfer the mixture to a blender or food processor and blend until smooth
5) Add salt and pepper to taste
