- 1/3 cup coarsely chopped dried apricots
- 1/2 cup light brown sugar
- 1/4 cup dried cranberries
- 3 cups fresh cranberries
- 2 tsp grated orange zest
- 1/4 cup orange juice
- 1/2 tsp ground ginger
- In a medium saucepan, bring to boil apricots, sugar, and dried cranberries along with 1 cup of water.
- Reduce heat to a simmer. Let mixture simmer for 10 minutes, stirring occasionally.
- Add remaining ingredients and let simmer for 10 minutes more. Serve chilled or at room temperature.
