Spring Pea Soup with Mint

Ingredients

  • 2 cups fresh, de-shelled peas
  • 2 avocados, peeled and pitted
  • 1/4 cup fresh mint
  • 3 1/2 cup filtered water
  • 1 Tbsp fresh lemon juice
  • Sea salt and freshly ground black pepper

Directions

  1. Blend all ingredients in a high-speed blender until smooth.
  2. Serve immediately.
