Blueberry-Pineapple Parfaits

Ingredients: 
  • 1 c plain Greek-style yogurt
  • 2 Tbsp maple syrup
  • 1 c diced fresh pineapple
  • 11/2 c fresh blueberries
  • 1/2 c granola
  • 1/2 c shredded coconut, toasted
Directions: 
  1.  In a small bowl combine yogurt, maple syrup, and pineapple.
  2.  In four small wine glasses or parfait glasses spoon alternate layers of pineapple mixture, blueberries, granola, and coconut.
  3.  Repeat.
