Chilled Strawberry Soup with Mint
10 minutes prep time + chill time | Serves 4
What you need:
1 to 1-1/2 c unsweetened, chilled apple juice
4 c fresh whole strawberries, washed and hulled
2 to 4 Tbsp honey, to taste, depending on berries’ sweetness
1⁄4 c fresh chopped mint
1⁄2 c nonfat vanilla yogurt
4 ginger snaps, crumbled, for garnish, optional
What you do:
In a blender, puree 1 cup of juice and strawberries. With blender running, drizzle in honey to taste. Add mint and puree for another minute. If mixture is too thick, add more juice for desired consistency and puree another 30 seconds. Strain soup through mesh strainer to remove seeds. Chill, pour into individual bowls, and top with a dollop of yogurt and crumbled ginger snaps, if desired, before serving.
