Green Banana Flour Pancakes

Makes approximately 12 pancakes
Ingredients
  • 2 c green banana flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 12 tsp salt
  • 2 c your favorite non-dairy milk
  • 4 eggs, whisked
  • 1 tsp vanilla extract
  • Oil for cooking pancakes
Directions
  1. Whisk together green banana flour, baking powder, baking soda, and salt. Whisk in milk, eggs, and vanilla.
  2. Heat 1 teaspoon oil in a pan over medium heat. Add 13 cup of batter to pan to form 1 pancake.
  3. Cook about 2 minutes, until bubbles appear on surface and underside of pancake is cooked. Flip pancake and cook remaining side for another 2 minutes.
  4. Repeat steps 2 and 3 until all batter has been used.
  5. Serve pancakes with maple syrup, honey, yogurt, and/or sliced fruit.
