Birria Tacos

Ingredients
- For the Birria:
- 1 pound beef chuck roast, raw, cut into 1-inch cubes
- 1 packet Simply Organic Birria Seasoning Mix
- 1 1⁄2 cups beef broth
- 1 Tbsp high-heat oil (avocado or vegetable oil)
- For the Tacos:
- 8 (6-inch) corn tortillas
- 16 ounces shredded Chihuahua cheese
- 1⁄4 cup finely chopped cilantro
- 1⁄2 cup finely diced white onion
- Avocado oil non-stick cooking spray
Directions
- In a bowl, coat meat in Birria Seasoning and set aside.
- In a Dutch oven or 5- to 7-quart pot with a lid, heat oil over medium heat. When oil is shimmering, add meat and cook for 2 minutes per side, until just starting to form a crust.
- Add broth and bring to a boil. Reduce heat to low for a gentle simmer; cover, and cook for 3 hours.
- Using tongs, remove meat and place in a bowl, leaving liquid in pot (as consomé for your tacos). Shred meat, then stir in about 1⁄4 cup consomé.
- Heat a griddle or a large skillet over medium heat.
- Grease skillet well, and grease again between each batch of tacos. Dip a corn tortilla in consomé on both sides for a few seconds.
- Place tortilla on griddle. Sprinkle cheese on entire tortilla, then spoon shredded beef on one half of the tortilla. Once cheese starts to melt, sprinkle some onion and cilantro on the cheese-only side (to help it stick), then fold taco in half, pressing down firmly to make sure it stays together. When tortilla is crispy, flip and cook the other side for another minute or two until tortilla and cheese are crisp on the edges.
- Repeat with remaining tortillas and fillings, greasing skillet each time. Serve warm, dipped in leftover consommé. Enjoy!
