- 1 small acorn squash, peeled, seeded, and cut in 1-1⁄2-inch pieces (about 3 cups)
- 1 medium carrot, cut in 1-inch pieces
- 1 Tbsp canola oil
- mixture of:
- 1⁄2 tsp ground cinnamon
- 1⁄8 tsp ground allspice
- 1⁄8 tsp ground coriander
- 1⁄8 tsp black pepper
- 2 cups reduced-fat (2%) milk
- Salt and freshly ground black pepper
- 2 plum tomatoes, seeded and finely chopped, for garnish (optional)
