Whisk together green banana flour, baking powder, baking soda, and salt. Whisk in milk, eggs, and vanilla.
Heat 1 teaspoon oil in a pan over medium heat. Add 1⁄3 cup of batter to pan to form 1 pancake.
Cook about 2 minutes, until bubbles appear on surface and underside of pancake is cooked. Flip pancake and cook remaining side for another 2 minutes.
Repeat steps 2 and 3 until all batter has been used.
Serve pancakes with maple syrup, honey, yogurt, and/or sliced fruit.
