Swiss Chard and Potato Tacos with Fresh Tomato-Cilantro Salsa

Ingredients
  • 1 cup chopped fresh tomatoes with their seeds and juices
  • 14 cup chopped white onion
  • 13 cup chopped fresh cilantro
  • 1 jalapeño, minced
  • Salt 
  • 1 lb Swiss chard, coarse stems removed and discarded
  • 1 large boiling potato, cut into 12-inch dice
  • 14 tsp red chili flakes
  • Salt to taste
  • 6 whole-wheat tortillas
Directions

1. Make tomato salsa: Combine tomatoes, onion, cilantro, jalapeño, and salt to taste in a bowl. Set salsa aside.

2. Make taco filling: coarsely chop Swiss chard.

3. Bring 2 cups water to a boil in a medium pot. Add diced potato and cook over medium heat, covered, for 5 minutes.

4. Add Swiss chard and cook, covered, about 5 minutes. Drain Swiss chard and potato into a bowl. Add chili flakes and season with salt.

5. Assemble tacos: Divide filling evenly between tortillas. Top with salsa.
