Ingredients

  • 4 Ezekiel 4:9 Organic Sprouted Flourless Pita Bread
  • 1 cup roasted sweet potatoes, cubed
  • 1 cup roasted Brussels sprouts
  • 4 cups of spinach, sauteed
  • 12 cup cranberry sauce (homemade or store-bought)
  • 14 cup toasted walnuts or pecans, chopped
  • 2 Tbsp vegan or regular cream cheese
  • Fresh rosemary or thyme for garnish
  • Olive oil, salt, and pepper

Directions

  1. Preheat oven to 400°F. Toss sweet potatoes and brussels sprouts with olive oil, salt, and pepper. Roast for 20–25 minutes until caramelized.
  2. Sauté spinach in a pan with olive oil and a little salt and pepper until wilted.
  3. Warm pita breads in the oven or toaster. Cut in half to make pockets.
  4. Inside each pita pocket, spread a thin layer of vegan cream cheese.
  5. Add roasted vegetables, spinach, a spoonful of cranberry sauce, and sprinkle with toasted nuts.
  6. Top with fresh rosemary or thyme for a festive touch. Serve warm.
