Chicken
- 4 boneless, skinless chicken breast halves (about 1 pound)
- 1⁄2 tsp salt
- 1⁄2 tsp freshly ground black pepper
- 1⁄2 cup gluten-free bread crumbs (see below)
- 2 Tbsp cornstarch
- 2 Tbsp canola oil
- 1⁄2 cup store-bought gluten-free marinara or spaghetti sauce
- 1⁄2 cup shredded mozzarella cheese or cheese alternative
