- 1 cup chopped spinach
- 1 cup chopped marinated artichokes
- 1⁄2 cup sliced red onion
- 1 jalapeño, sliced
- 1 cup vegan cheese shreds (we used mozzarella and cheddar)
- 3 Tbsp vegan parmesan
- 1⁄3 cup + 3 Tbsp olive oil
- 1 clove garlic, minced
- 1 cup cashews, soaked
- 1⁄2 cup fresh cilantro
- 1⁄2 cup + 1 Tbsp fresh parsley
- 1⁄4 cup fresh chives
- 1 medium avocado
- 1⁄2 lime, juiced
- salt and pepper
