- 1 medium head of cauliflower, cut into bite-sized florets
- 1⁄2 cup cherry tomatoes, diced
- 1⁄2 cup Persian cucumbers, diced
- 1⁄4 cup fresh flat-leaf parsley, chopped
- 1⁄4 cup red onion, sliced
- 1 eggplant
- 1⁄4 cup tahini
- 1 1⁄2 Tbsp lemon juice
- 1 Tbsp + 1 Tbsp olive oil, divided
- 2 cloves of garlic
- 1 Tbsp za'atar seasoning (ours had salt, if yours doesn't add 1⁄4 tsp salt!)
- 1⁄2 tsp smoked paprika
- 1⁄4 tsp sea salt
- 1⁄4 tsp + 1⁄4 tsp black pepper, divided
