- 1 Tbsp canola oil
- 1 Granny Smith apple, peeled, cored, and coarsely chopped
- 1 leek, white part only, finely chopped
- 4 cups nonfat, reduced-sodium chicken or vegetable broth
- 1 sweet potato, peeled, halved lengthwise, and cut in 1⁄2 inch slices
- 1 can (16 oz) pumpkin puree or 2 cups homemade puree
- 1⁄4 tsp dried thyme leaves
- Salt and freshly ground pepper, to taste
- 4 tsp finely minced chives, for garnish
