Ingredients
  • 8 oz cherry tomatoes
  • 1 red bell pepper
  • 13 red onion
  • 1 Tbsp cilantro leaves
  • 1 Tbsp coconut aminos*
  • Juice of 1 small lime
Directions
  1. Finely dice tomatoes, bell pepper, and onion. Chop cilantro.
  2. Add all salsa ingredients to a bowl and stir well.
  3. Serve immediately or store in an airtight container in the fridge.
Notes

*Coconut aminos is a savory seasoning sauce made from sea salt and the fermented sap of coconut palm. If you can’t find it, substitute light soy sauce. (The salsa will not be gluten free if you use soy sauce.)

The quality of the tomatoes you use for this salsa will make all the difference. Add this fresh, yummy salsa to any Mexican-style dish you make.
