Ingredients
- 2 cups Eden Organic Quinoa, washed and drained
- 2 1⁄2 cups water, for cooking quinoa
- 2⁄3 cups pitted black olives, cut in half
- 2⁄3 cups pitted green olives, cut in half
- 1⁄4 cup pine nuts, lightly pan toasted
- 1 cup green onions, finely chopped
- 1⁄4 cup fresh parsley, finely chopped
- 1⁄3 cup red bell pepper, cut into thin strips
- 2 cloves garlic, finely minced
- 2 Tbsp Eden Extra Virgin Olive Oil
- 2 tsp Eden Ume Plum Vinegar, or to taste
